Job Description:

The Food & Beverage Manager is a full-time employee of the UPEISU who works with and is accountable to the General Manager.  During the summer of 2018 we will be completely renovating our campus pub to merge two operations, the pub and coffee shop.  The Food & Beverage Manager will be responsible for overseeing the day-to-day operations of the UPEISU Campus restaurant & cafe.  This includes staffing, marketing, training, purchasing, menu creation, event management as well as other duties as required.

 

Staff Responsibilities

·         Recruit, train, coordinate train and evaluate:

·         Kitchen staff

·         Bartenders

·         Servers

·         Security

·         Conduct staff evaluations once a year

·         Ensure staff have appropriate certification, including but not limited to, Responsible Beverage Service and Food Safety Training

·         Hold staff meetings

·         Initiate training practices and enforce operational and personnel policies and procedures

·         Maintain staff records

·         Sit on various hiring board committees as required

·         Sit on the UPEISU Business Advisory Committee

·         Maintain an accurate banned list for the operation

·         Supervisor, coach, mentor and discipline staff in accordance with the policies and procedures of the UPEI Student Union

·         Manage operations with passion, integrity, and knowledge while promoting the culture and values of the UPEI Student Union.

 

Inventory & Equipment

Ensure proper procedures are followed when handling UPEI Student Union food and liquor inventory and cash

·         Accountable for all inventories

·         Conduct a detailed food and liquor inventory

·         Purchase and maintain food inventory

·         Purchase and maintain liquor and supplies inventory

·         Implement and maintain inventory systems and controls

·         Ensure operations are fully stocked at appropriate inventory levels

·         Ensure equipment is maintained and in working order

·         Knowledge and application of all equipment setup and takedown procedures

·         Maintain the UPEISU security system

 

Financial Responsibility

·         Prepare bi-weekly payroll

·         Analyze variances and initiate corrective action

·         Balance and submit daily sales, inventory, and deposit reports

·         Maintain labor costs and control waste

 

Marketing & Development

·         Establish personal contact and rapport with potential and current customers

·         Initiate and implement in house food and beverage promotions

·         Liaise with corporate sponsors when coordinating operations, events, and activities requiring their involvement

·         Menu planning and review

·         Promote use of the restaurant to clubs, societies, students, and the UPEI campus community.

·         Understand the needs of customers and the level of their service required

·         Develop and implement marketing strategies for the operation

 

Event Management

·         The Food & Beverage Manager will work closely with the VP Student Life regarding UPEISU events and activities in the restaurant area and will liaise with staff and departments to ensure a safe, legal, and efficient operation.

·         Work with students, groups, and UPEI departments to organize events as requested

·         Consult with all stakeholders on campus to determine what events and activities should be held on campus

·         Organize variety of both wet and dry activities and events for students and staff of UPEI
·         Outreach with student groups and departments on campus

 

Communication

·         Collect, analyze, and evaluate information submitted by customers and staff members

·         Complete and file manager reports

·         Comply for requests for information

·         Maintain a positive relationship with customers, staff, students and the University

·         Promote alcohol responsibility in the Student Centre and on campus

·         Create a positive guest experience by delivering a high level of service and ensuring all staff engage guests

 

Compliance & University Personnel

Work closely with the following groups to ensure proper communication is maintained when department activities require their services, input, or approval:

·         UPEI Security

·         PEI Liquor Commission

·         PEI Department of Wellness & Health

·         UPEI Maintenance Department

 

Job Specifications

·         University degree or a College diploma

·         Minimum two (2) year experience in the restaurant and/or cafe industry

·         Excellent organizational and interpersonal skills

·         Event management experience

·         Knowledge in POS systems

·         Must have a Responsible Beverage Server Certificate and Safe Food Handling Course

·         Understanding of cafe industry

·         Able to work days, nights, and weekends
