Job Description:

Dalvay by the Sea is looking for an enthusiastic and experienced Restaurant Manager to be a part of the Dalvay team in our 2019 busy summer season. The Restaurant Manager is responsible for managing the daily operations of our restaurant, including the selection, development and performance management of employees. You will be responsible to maintain high standards of food, service, health and safety, ensure the efficient and profitable business performance of the restaurant and the optimal utilization of staff and resources.

DUTIES & RESPONSIBILITIES:

General

  • Ensures the restaurant meets its service and sales objectives.
  • Directs the activities of staff, ensuring the guests have a pleasant experience through prompt and polite service.
  • Fill in for any staff members in case of absenteeism and ensure that the overall function of the restaurant is managed properly.

Financial

  • Adhere to company standards and service levels to increase sales and minimize costs, including food, beverage, supply, utility and labor costs.
  • Reconcile restaurant receipts with server sales, daily.
  • Ensure cash management procedures are completed accurately.
  • Retrieve and document Daily Reports, per shift.

Food safety and planning

  • Enforce sanitary practices for food handling, general cleanliness and maintenance dining areas.
  • Responsible for ensuring consistent high quality of food presentation and service.
  • Maintain professional restaurant image, including proper uniforms and appearance standards.
  • Supervise portion control and quantities of preparation to minimize waste.

Guest service

  • Meeting and greeting guests and organizing table reservations and waiting list.
  • Present menu, answer guest questions and make suggestions regarding food and beverages.
  • Listen and respond to comments and questions of every guest and pay regular table visits, ensuring Dalvay food and service standards are being met.
  • Conduct regular restaurant walk-throughs in order to gain the guests’ perspective of how the restaurant looks.
  • Ensure fast and accurate guest service at all times.
  • When on the floor, is in a position that allows flexibility for troubleshooting where necessary.
  • Guest-focused in all facets of the restaurant’s operations, to ensure a positive guest experience.
  • Respond to complaints, in a timely fashion, taking any and all appropriate actions to turn dissatisfied guests into return guests.

Operational

  • Manage shifts which include: daily decision making and planning, while upholding standards, product quality and cleanliness.
  • Investigate and resolve complaints concerning food quality and service.
  • Communicate with the maintenance department any events and functions, as their assistance will be required for set up and tear down; also report any issues with the building, repairs or damage.
  • Maintain an accurate and up-to-date plan of restaurant staffing needs. Prepare schedules and ensure that the restaurant is staffed for all shifts, and fill in as required.

Personnel

  • Provide direction to employees regarding operational and procedural issues.
  • Lead by example to demonstrate and reinforce that the guest is top priority and the importance of projecting positive guest service behaviors; such as immediate acknowledgement, smiling, maintaining eye contact, and sincerely thanking guests for their business.

JOB QUALIFICATIONS & REQUIREMENTS:

  • Diploma, Certificate or Degree in Food & Beverage, Hotel Management, or equivalent
  • Minimum 2-4 years’ experience in the same or a similar role
  • Ability to demonstrate good supervisory skills and to work effectively as part of a team
  • Ability to communicate with both customers and colleagues at all levels of seniority and liaise effectively with other internal departments
  • Good interpersonal skills, ability to obtain information, determine course of action and follow through to successful resolution
  • Drive and enthusiasm for food & beverage sales
  • Ability to grasp new concepts quickly, generate fresh and innovative ideas
  • Ability to manage personnel and meet financial targets and deadlines
  • Knowledgeable of provincial liquor laws and smart serve requirements
  • Fluent in English (Bilingualism would be an asset)
